"If we could change it, we would" Anything is possible. As long as theres a will, theres a way. "But we can’t change the fact that people have been eating cows and lamb for thousands of years" That doesnt mean anything. Before livestock, humans have been eating nuts and berries. Eating meat was a very rare occasion back in the hunter days. And back in the days food was scarce. Food is no longer scarce in this day and age. We all have a choice. Its all down to whether one wants to or not.
