I'd say most of the Nag Hammadi texts are 2nd-3rd century. Parts of them, of course, date back earlier. Plato's Republic, for example, is obviously really old, but it was preserved among the Nag Hammadi texts. The Gospel of Thomas may have bits that date back to the 1st century. Most of the New Testament texts are first century (except for the possible exceptions of 1 Timothy, 2nd Timothy, Titus, Luke-Acts, 1 and 2 Peter). In general, the New Testament books are older.

Funny that you ask about the methodology. In my opinion, there is no "religious studies methodology." We are a hybrid discipline that borrows the methods from different fields. Having said that, we do have some pillars of the discipline that have helped shape it. Weber, Durkheim, Frazer, and Tylor are important early voices. Then Mary Douglas and Geertz. Then modern scholars Catherine Bell and JZ Smith. I'd say start with Durkheim's "Elementary Forms of Religion." He is kind of the grandfather of Religious Studies. If you want to approach religion from a philosophical or theological perspective, those have slightly different methods, and I'm admittedly not that qualified to recommend who to start with.

The differences between Hinduism and Christianity are huge (completely different conception of the soul, after life, God/gods, sin, etc.). So, yes, many Gnostic groups had different ideas about Jesus and what his death means for salvation when compared to proto-orthodox groups. But this is an insiders concern. If a traditional polytheistic Roman looked at these Christology debates from the outside, he probably would have a harder time telling the difference: "Wait...you Gnostics believe he is a god-like human, you proto-orthodox think he is fully God AND human, why are you arguing? Seems like you agree 50% of the time." It is a huge problem for Christian theology, but strikes an outsider as a "small difference."

Literally the entire last third of this video is a discussion of church authorities rejecting a "gospel of Thomas" as a forgery written by heretics. I'm not hiding the fact that there was a mainstream group of ecclesiastical authorities who didn't like it. So yes, I agree it was rejected precisely because it was viewed as heretical because of its heretical sounding passages (and also because the 4 Gospel tradition was so early, and this text was so late, which I also mention in this video).
What I am trying to do is complicate what we mean by "Gnostic." The few "gnostic-ish" sayings in the Gospel of Thomas sound nothing like Valentinus, nothing like the Gospel of Judas, no mention of aeons or archons, no mention of Barbelo, no wicked demiurge, no hatred of the material world. Basically none of the stuff we associate with Gnosticism. So, I will unapologetically call the Gospel of Thomas "a text with a few gnostic sounding passages." That is not watering it down. That is me interpreting the data accurately and in line with other scholars of early Christianity. You think I am manipulating the data? I think you have an inaccurate and totalizing view of "Gnosticism." I don't say that as an insult, I say that as someone who has read a hell of a lot of this stuff and want to encourage you to read up on the complexity of what we call "Gnosticism." Dr. David Brakke and Dr. Karen King are good starting points.
