Someone may correct me, but jus sanguinis seems to be an universal rule and jus soli comes on top of it, if applicable. Some exceptions apart (ex.: a Lebanese mother), the parents will always pass their nationalities to their children; the country of birth may give an extra citizenship regardless of the parents' nationalities.

It shouldn't. If the border control is able to link your person to your multiple passports (not sure if they can ATM), they can simply reject you - or even worse if they consider you are really trying to cheat in order to live there perpetually on tourist visas, for example.

@rivenoak yeah, Germany is a kind of strange scenario. If you ask about the possibility of dual citizenship, the answer is not "yes" or "no" but something like "50%".

(Un)fortunately not. But it would be a fun experiment to calculate the theoretical maximum number of citizenships a single person can have.
