  1. I like how compact and somewhat discrete this bag is. zero molle would be better perhaps. I carry, here in Canada, single use chemical hand warmers. They slip inside work gloves, winter gloves etc and can make a big difference. That water tap multi-tool has poor reviews - if the same one, on Amazon. Maybe European water spigots are different, but having a small Knipex 87 01 125 Cobra Pliers in your bag - along with any large Leatherman like a Wave or Signal, can take you far. I would also add to your IFAK (if not in there already) a large Israeli bandage and a tourniquet.

  2.  @chewminem2044  if the purpose is to be a gray man and blend in, having a even small Tactical looking backpack defeats the purpose. I have several backpacks with Molle on them and they're great, but for her purpose that perhaps might not be the best thing.
