  1. there is a dish in Japan called Hiyashi Chuka. In the Summer months it is scorching hot in Japan so the dish is a refreshing meal to cool down the body. :)  that is why. I guess you can ask why some people cook vegetables and some people eat them raw. Some people just want a refreshing cold dish.
