  1.  @mazmaz02  Yes, however (at least where I live) you still need to tell what you earned and get taxed on it, even when payed in cash. Not notifying of payed in cash earnings (or underselling it) is a crime. Ofourse some people will try to always cheat even knowing there could be a penalty, but generally with harsh enough punishment most people and companies wouldn't want to take the risk.
