  3. Lactose-intolerance is genetic. Lactose-tolerance is connected with climate - a rainy, temperate climate means that grass is the natural prolific crop. If you have grass you need sheep and cattle to turn it into human food, either dairy or meat. There is therefore selective pressure in such climates for the version of the relevant gene which preserves lactose tolerance beyond early childhood - environment influencing genetics. Cattle herders in Kenya have lactose tolerance. Indians use cows for dairy produce (ghee or clarified butter, lassi or liquid yoghurt, cheese).
