Scott et al had very bad luck. A strong wind that was due to blow from the Pole towards the North, when they were on the return journey, failed to blow. This was most unusual. With the help of the sails which his sledges carried, this would have speeded their journey back greatly. Scott's team did lots of scientific work and recorded lots of data on the way to the Pole, some of which was being used over a hundred years later in climate science. Amundsen did no scientific research or observations. He sailed to the point giving the shortest possible overland journey to the Pole, then made a bee-line for it. He had spent time with Inuits and listened to them, and he was highly experienced with dog-sledging.
