one minor thing: the matzoh is not "there was not time for the bread to rise because they were in too much of a rush" they were told a week in advance that they were leaving, and that they would be eating unleavened bread when they left. (I wonder, was it perhaps a matter of it being more portable? given that it is basically a cracker (or as my tastebuds often compare it too when I am in a grumpy mood during passover, stale cardboard), it is definitely more stable and lasts a lot longer than any other bread I can think of (I don't think matzoh ever goes stale... and if it did, I don't think I would notice the difference...). I suppose that would make it a better sort of bread to be taking with you when packing up and leaving on foot with chariots in pursuit... never mind for having available once you have moved into the sinai desert and gotten lost or something (it took them 40 years to make a journey that probably could have been made in 3 days...): when you don't really have any means of protecting your bread from the elements, it is probably helpful to have a sort of bread that doesn't need to be protected as much...
