Typically, the attorneys would have any relevant experiments done if they thought it would further their case. The two main reasons for the prohibition are that they need to know what information the jurors have and that experimenting at home can lead to unpredictable results.

You'd be in contempt of court if they found out about that. Bottom line is that it's not that hard to avoid violating the jury instructions. At least it's not hard to avoid the ones that would lead to this sort of punishment, the other ones can be a bit confusing, but you can typically send notes to the judge if you don't understand the instructions.
