The reason Chicagolanders detest ketchup (so I was told) is because, back in the day, when sausage or dogs were on the verge of turning bad, venders would mask the smell by using a blended version of toppings, with vinegar, and cover the links with it. No Ketchup meant that the meat was fresh. Chicago was inundated with stockyards and there were (are) a plethora of hot dogs. I do not doubt that this legend is true. Some joints refuse to even carry ketchup. Not even for fries. 😒
Btw, Chili was not, and is never meant to be, made with beans. It is a meat stew. Poor people, who could not afford meat, started substituting beans, for the meat.
Chop suey is an Americanism. The Chinese, pioneer American railroad builders, would cook whatever scraps and veggies they had, in soy, and serve it with rice.
The Chimichanga was an American accident. A guy making a burrito accidently dropped it in the oil fryer and had to let it cook before removing it or it would have fallen apart.
I love many ethnic foods but, I Love American Cooking!!
