mmmh, the brain spike and the placements of the knives to open up the artery could perhaps be done using a machine.
but the spine destruction is a harder step, and probably have to be done manualy.
if this method can create longer lasting fish, it will probably get a comfortable place in the market, so I am kinda curious to see if a machine could be made to make the process quicker and cheaper.
I don't know if the spide destruction step can be skipped for a result in between ikejime and normal, but if that is the case, it wouldn't be weird to perhaps see this way used more often, as having to trow away less fish might turn out to save profit.
but mass yeeting fish into a room filled with ice is quicker... and requires no machines...
the insentive does lie with the fishing companies, cause they will need to advertize it to the businesses that sell the fish to the consumers...
I don't know how large the amount of fish is, that those fish shops have to trow away, but if it is a decent amount, they probably would want to have fish that last longer.
This would however drive down the demand for fish, meaning that fish populations would face less overfishing.
But this in turn would result in loss of jobs in the fishing business.
