Like - how to knock a guy off a horse - how to fight in a tight alleyway - how to fight someone using weapons your social class is not allowed to own - how to throw someone wearing armor as opposed to normal body weight - how to infiltrate/escape - how to fight two-on-one (it isn't just the-same-but-harder) - how to fight from a bad starting position (you're ambushed) - and on and on. Supposedly there's a martial art where the whole idea is to fight using an oar in a rocking boat - from some place with canals, where if you were a attacked in your boat, that'd come in handy.
