I think my mom used something called "Non Such" for her mincemeat pies. It looks like you can still buy it! It never appealed to me, so no surprise that Justine didn't like it!

They had several other series with the same people: Victorian, Edwardian and WWII or perhaps WWI. All good! They were on YouTube, but you can also probably order the dvds from PBS.

OK. Modern substitutions that I can think of and thanks to Google is baking soda for pearl ash and light corn syrup for the sugar in water boiled down to a syrup. They look nice, but not sure about the coriander. Thanks for the video!

They look like hushpuppies after they've been fried. However, hushpuppies are much easier and quicker to make since they don't rely on yeast to raise. They look yummy!

I've had grape dumplings that were delicious. A Native American recipe and possibly Cherokee. They were a dumpling like those for chicken and dumplings- flat squares- and cooked in grape jelly or grape juice. Those raspberry dumplings looked nasty after being boiled!!

Why did they bake the apples as opposed to stewing them over the fire? Well, duhhhh. I just read the recipe and they also stewed them! Is the flavor different because the consistency is the same once the cinnamon, etc. is added. Those look wonderful before and after baking.

Rice with fresh fruit. Sounds like something is missing! How could it turn into anything truly edible without more ingredients?? The sauce doesn't even seem right. Too runny. Oh, well! Live and learn! Ron is so funny!
