This is why I find people who make no nonsense recipes and exclusively follow those, to preserve my sanity. Chef John (Food Wishes) is one of the best in my opinion. I also learned I can make pizza from scratch in a couple hours that doesn't suck ass, including time for the dough to rise. If I want the life story of the recipe, I watch historical cooking stuff like Townsend's channel or Taste of History.

@rayjones1455 Hey, I just recommended that guy too before I even saw your comment. A few of his recipes do get more complicated, but he also has a lot of recipes that I didn't know could be so simple.
