  2. that avocado oil and the oven too hot is probably why it didn't rise maybe the use of icing sugar instead of castor sugar. lamingtons are just sponge cake squares dipped in chocolate icing and rolled in desiccated coconut if you wanted to you could buy a pre baked sheet cake or use a packet sponge cake mix.
