The theory of evolution describes how one species can have a branch that ends up becoming a new species...It doesn't require it to happen with every branch. If over generations a branch ends up with some traits from another species and that "mix" happens to be particularly well suited to it's environment, it may not continue to pick up the additional traits needed to be classified as a different species and continue in that general form (with only minor changes) for as long as that form "works."

Higher demand increases the pressure on the supply side requiring more resources to be allocated. As long as the profit margin stays the same after the cost of the additional allocation of resources, then prices need not rise. Often though, the cost of expanding will exceed the additional revenue from increased sales and prices will rise to compensate. If demand simply can't be met then prices must go up. Greedy bastards do exist, but your concept that demand should lower prices is a bit off.

In the long run, the evolutionary process doesn't really care about what species an organism is. Species is a human made classification made to help organize all the various organisms in to more easily studied groups with similar characteristics. Evolution has no final goal for any organism. It is continuous and only "cares" about providing organisms a method to increase their chance of survival. Whatever mix of traits works...works...
