The slaying of the dragon is an obvious metaphor. The dragon is a symbol of human nature, which is inclined to sins like anger, greed, lust, etc..... The overcoming of the dragon is be born a new man, a Christ-man, one who walks the spiritual road to enlightenment. Basically it's about overcoming our lower nature as animals to pursue virtue and wisdom.
I like the England flag because it's a symbol of Christ: The cross is the cross, the white represents purity (Christ lived a sinless life), and the red represents sacrifice (Christ shed his blood to redeem mankind). But i much prefer Saint Edmund for patron saint of England, afterall he died a martyr in England itself.
