Actual truth is somewhere in the middle. Hitler (i.e. German higher ups) became "obsessed" with Stalingrad latter in the campaign when it became obvious they would not be getting oil from Caucasus. Therefore, they had to have an objective that they could show to the world as a goal achieved and victory won, at least in that campaign. Psychology is sometimes very important in the war.
