Theoretically, you could create Schwerpunkt out of few halls, take them, then move Schwerpunkt to other few halls and so on. Problem is that would take months, with possible Soviet counter-attacks on other places. At first Paulus tried to make whole Stalingrad as his Schwerpunkt, and take it in one blow. Then he reduced it to certain districts, and finally to groups of buildings. Whole idea of Schwerpunkt is a strike at certain place that would be decisive, and in Stalingrad there was no area that would be decisive, even landing areas were somehow improvised at different places.

Volga is the key, Hitler said himself, and Stalingrad was most western point in this part of Russia where you could get to Volga.

@sorsocksfake On a strategic level, whole Army Group B was NOT Schwerpunkt, because its primary job was to secure northern flank of Army Group A. AG A was Schwerpunkt of entire German effort in 1942 to get Caucasus oil. Even as November was unfolding there were still attempts by AG A to advance towards oil fields. Therefore, selection of more cautious commanders for secondary theater of Don and Stalingrad was rather logical move.
