Things were simple, German generals that survived the war were attempting to endear themselves to their new (Western) masters. They were selling the story how professional and clean was Wehrmacht in fighting Red Horde, with few bad apples like Paulus and of course that madman Hitler. Neither of which was in position to defend himself.

Well, whole German 1942 offensive effort was aimed precisely at getting oil :D If Germans had enough oil there would not be Fall Blau.

@aldosigmann419 They were producing synthetic oil as much as they could, but allowing USSR to rearm itself after catastrophic losses in 1941 would not be wise. Especially sine US was doing the same. Essentially, Axis lacked all kind of resources, from human to industrial, and could not afford to play defensively.

Essentially, each German choice after 19th of November was bad. Either get encircled and historically get destroyed, or attempt breakout without trucks and horses, endangering retreat of Army Group A from Caucasus. Presented with two bad choices, Hitler would usually choose one that required less retreating and there is that.

Most Romanian units, especially at the southern pincer, did fold after half day attack. Some did not, but they were minority.
