  1. I have always employed the Cornish method, because the jam can be terribly messy on top of the clotted cream. Do try some specialist jams, though. Lavender or rose water are very nice. Quince is also very pleasant. A good strawberry jam is a must (and clotted cream goes so well with a bowl of fresh strawbs).
