"Directly quoting someone is the antithesis of a strawman" This presumes that you cannot mis-interpret someone's words, even after repeating them.
And of course, you are quite right in saying that people can lie about having qualifications, but there is also the equally important point that people with legitimate qualifications are still often wrong. In most fields, there are differing, contradictory positions, not to mention positions held by those who genuinely have a qualification which have nothing to do with fact. And finally, there is the important point that science as a body is both fallible, often making errors that seem quite strange later on, the unwillingness to practice hand washing in the field of obstetrics for example, and only capable of transmitting as much knowledge as is currently held, which is substantially less than the complete sum of knowledge, thus making even the most learned and intelligent practitioners of their field subject to the whims and fads of their time.
