  1. It didn't. It just wasn't as badly decomposed as you'd expect (but still partly decomposed).

  2. Embalming. Though modern embalming usually doesn't preserve a corpse for that long, under the right circumstances (eg. cold, no air, no moisture) it can. The better the embalming method used and the more effective the coffin is at keeping out light, moisture, air and saprophagous insects (as well, it would seem, mould) the higher the chances that a corpse will decay more slowly.
