Because German peasants, deprived of their ability to support themselves by farming, would raise the d*ath's-head flag with the slogan Es muss sein (roughly translated "it must be", poetically translated, "wellp, we're boned") at which point they would go on a bloody lethal rampage, that being the only option left to them. They were effective enough that other Germans embarking on bloody lethal rampages would adopt their symbolism.
