  1. I generally agree, but I would say, one benefit of Kitchen Nightmares and even Hotel Hell is that it often shows the incompetence of the petit bourgeois and the competence of proletarians. Shame the defining point is bougie Gordon coming in to save the day. As someone who has worked in hospitality(line cook), I feel I got that attitude from watching Ramsay when I shouldn't have, and others around me hadn't so they probably thought I was a bit too intense sometimes, although that culture of brigade and performance under pressure was still there so perhaps I blended in more than I think now. On the "proper" method and ingredients thing, I like tradition in food culture so I think I like Ramsay' attitude there more than a Chili Jam-ie Oliver. But I think it's fine when you do say "today".
