  3. what if I told you it doesn't really matter; you have to adjust for elevation anyways.... so sure measuring by weight is exact, but it only works if you happen to live at the same elevation and in the same climate with the same humidity as the location where the recipe was developed... so in short it's all arbitrary and measurements are just there to be more exact than "about that much".
