  2. isn't folding a form of mixing? I just see it as a way to convey the idea that you should carefully combine the ingredients. it makes sense you can whip it in with an electric beater though, it's the same process you used to make the eggs fluffy.... they just continue to use the term "fold" because the french probably... they like to use out-dated terms.
