I think he is intrinsically wrong about the games being programmed for you to win. The game has a win state of course but each game treats that win state differently and its not the winning that is really the enjoyable part, its figuring out what the win state is and building yourself up to accomplish it. Just take any RPG, the monsters and bosses have set values in terms of health, damage and mechanics. Their sword swings, usually, will take only a set number of health. So at Level 1, you have no chance of surviving the hit, your health is clearly not enough to survive a single swing, but at Level 30 you can successfully take several of these hits without dying, thus increasing your ability to achieve the win state set by the developer. Some games even have mechanics, like Dodge rolls, that mastery of them are required to successfully achieve the win state.
The bosses dont just fall over for you, you have to actively seek out and deduce what the win state requires. This is what makes mastery and overcoming the game most satisfying.
