Siege warfare was not a science and thus mass assaults were the favoured method of the ottomans, much western fortification was developed directly against this. The jannisaries were the elite reserve, azaps (conscripts) and irregular forces (who had joined on for loot) were sent in first as they were less valuable (the irregular troops were literally free and would benefit you by dying), the jannisaries were sent in to deliver the fatal blow but if things were bungled or the foe difficult they would still take heavy casualties given the nature of the fighting. What made the ottomans formidable was their ability to maintain and replace casualties far more effectively than their enemies, at least in that type of fighting, on the field their artillery was excellent, numbers unparalleled and troop types versatile without lower quality, however due to the jannarisaries they would become increasingly archaic and have to make up the shortfall increasingly with irregular troops, enemy political infighting (they were in many senses protected by the Austrians having no shortage of enemies and in all senses by they fact that no other powers wanted Russia in the Balkans and Mediterranean and were willing to intervene to stop it) and axillary forces from their vassals (especially the tartars, Albanians and Serbs).

And just like those modern day workers who go on about it being necessary given their long work days the reality is that they spent all their time loitering around the coffee shop pretending to not be totally useless and overpaid.
