The same as humans evolving differently over their culture and diets, which can still be witnessed, somewhat, in the facial bone features between the vegetarian and meat eating cultures of long ago, which occurred between the first farmers, and horse/cattle herders. The herders diet goes back even farther, to the hunters of the Aurochs, which they domesticated, creating cattle.
The herders/meat eaters became flat-faced, while the vegan cultures had protruding facial features, and teeth, similar to the apes. To this day, that also leads to the lactose intolerance in those whose DNA traces to the vegan cultures.
