  2.  @Amanda-C.  1. Buy quality chickens. I get my nature raised chickens from a local Middle Eastern butcher and I don't want another chicken from any chain store. The taste improvement is unreal. 2. Search "Why I Buy Whole Chickens Pro Home Cook" and learn how he cooks chicken. For an excellent chicken roast, a YouTube named Philly Boy Jay has an excellent recipe. I would only add that he uses cheap ingredients sometimes -- use the best quality you can.
