"Fruity" and smooth flavored EVOO starts to go rancid after only a month or two at room temp so I don't believe it would be stable at cooking temps.

No oil should be heated to high temps. In fact you should avoid bottled oils acording to health experts like joel wallach. Most bottled oils are denatured and rancid before you open the bottle (due to the refinement process and light).

Most EVOO isn't actually EVOO. It is mainly regular olive oil and other oils mixed with a little extra-virgin olive oil to give it the flavor of EVOO.
