Subway could start by ditching the prefabricated "shingles" of meat (I want a sandwich, not my roof redone) and instead use a meat-and-cheese slicer standard in authentic delis. Nothing says "not fresh" like having your sandwich meats be pre-sliced and pre-assembled in a fabric with other meats for who knows how long. Disgusting. The worse is when the "sandwich artist" pulls out a rolled-up shingle, unrolls it, cuts it in half, puts one half back, puts the other on your bread. 🤢 Next, when the lettuce starts turning red, replace the lettuce; or if the tomatoes start looking "slimy," replace them! If the location doesn't see enough traffic, then start using variable-sized containers to waste less.

However, it wouldn't work with a franchise because all the stores need to have consistency meaning if you get a Cold Cut Combo from one location it should taste the same as another. A simple solution would to not prefabricate the meats. Keep them separated until a customer orders.

  11. As a bespoke art form, I think it's valid and has a place in society. But it's honestly obsolete when it comes to being a tool for mass-producing written communication.

So many people would learn about Nesser, his son, and the incredible quality, craftsmanship, and tradition behind their work. It'd be a massive spotlight on a tradition that deserves more attention.
