  7. All of these are soft steel blades. Having a lot of experience with chefs knifes my ranking would be like this keeping in mind that Henkels & zwilling are the same company. Global ZWILLING Henkels & ignore the rest. The steel hardness will determine edge retention. Anything below 57 is soft & will require constant sharpening! Not just honing. The harder the steel the more prone to chipping. Western chefs have soft knifes because of the easy repair. & the environment they are used in. Japanese knifes are cared for extremely & will normally always be much sharper but be prone to chipping so you have to use them with care. I have knifes from £15 - £800 they all have a place & use case!
