Usual German form of filling the glasses: You put the glas in one and and the beer can or bottle in the other, you than turn slowly both in a 45° angle, so that the beer slowly flows into the glas. This creates less foam and also keeps the gas in the beer. The expert or bartender increases at the end the distance beween each to get the right amount of foam. 12:35 he got it.

Barley, wheat and different traditional brewing methods. In one the yeast floats at the top (top fermentation) and in the other at the bottom (bottom fermentation ring) - this mostly depends on the temperature. Dark beer is created by roasting the barley and wheat. The starch is partly converted into a sugar, which is why dark beer is sweeter. With clear beer the yeast is filtered out; with cloudy beer the yeast is part of the taste.
