  1. A other problem was the brewing temperature. Wheat needs a low temperature to ferment properly and German brewerys have threfore often gone under the earth (Braukeller - brewery cellar) were it is even in the summer cool. The US brewers have not been able and willing to invest into underground brewing structures.
