They all log data as they need it for billing and for controlling how many devices you connect up and where those devices are. Don't forget they (and police) see all your unencrypted Data - under UK Law definitely as it is a requirement. If the company itself does not directly log data, the host company or equipment owner is required to. It doesn't matter if a server is RAM only.

In the UK, all VPNs and Datacenter operators have to provide access to Data in and out by Law. The other thing is that if NordVPN was going to ignore the Laws, they would not be adding VAT on to UK purchases. Do they even pass it on to HMRC as there is NO NEED if they are in a Lawless Country. Why would they suddenly be complying with HMRC and collecting UK Taxes on their behalf? That makes me think they also have to go along with access to Data if they want to stay in the UK Datacenters. I remember PIA having a problem with that and dumped the UK, they had servers in Amsterdam for UK people. There is nothing worse than some desperate for money youtubers advertising a VPN and telling various lies about why you need a VPN. 99% of people do not need a VPN and don't benefit in any way. All they do is access your Data you allow them to, profile you via payment method and then sell that data to others.

NO company is going to protect you in any legal dispute for $5 a month. Most VPNs and secure email services are honeypots.
