Italian evolved from vulgar. A modern day Italian can read Dante's Divine Comedy, but Dante didn't call the language he wrote "italian", but "vulgar". The first writing in vulgar we know of had been written in 960 AD. However we know that already in VIII century, common people spoke vulgar, and could't understand latin.

Other "modern" things they had were taps, metallic water pipes and water pumps, both for ships and hydrants.
