*supercooled. You can have impurities, they just can’t be macroscopic. I mean a sodium ion is not a nucleation site. It also needs to be in a smooth container, as roughness provides nucleations. At best it can get to minus 40 and remain liquid, which is really cold.

@joeylawn36111 it needs to be free of macroscopic particles. I mean they could be microscopic to the eye, but much bigger than a molecule. Smooth container helps too.

That water thing is spontaneous symmetry breaking. Liquid water has no preferred direction, until it freezes and the ice crystals define an orientation, but when there’s no tiny particles or surface roughness on which to start freezing, it just doesn’t. So it can down to minus 40 C or F, and stay liquid, but it should be ice 🧊. When one part freezes, all the other molecules say “we have a crystal, line up every one!”, and they all do, quickly.
