@peggysue1725 Traditionally this would have cooked for hours over coals. The expediency of gas, or worse yet electricity at 100% duty cycle and then off is not the best way to cook most things. Quality cooktops properly regulate rather than just use on/off cycles.

@djdissi oil + wine stops the burning. This is why so many recipes call for the white wine. It isn't just to flavor, or to try and get people drunk. It actively inhibits the burning. But seriously, lose the medium-high. Cook it slower for longer. If you're even getting to medium you have lost the whole idea.

It may be a hard thing for us to hear in the west, but if you have to send people out for food into a mine field, elders are also more expendable as they aren't capable of serving in the war effort as troops, and cannot build the population back up by having children. This is the kind of hard choices that all of our families were making 80 years ago that we have been insulated from by decades of peace. These are the kinds of decisions, the kinds of sacrifices that really deserve our tears. We are lucky to have been insulated from such hard choices so long.

Black pepper was chosen, much like the supermarket stock of today, for its storage capability for the benefit of merchants and not the consumer. Long Pepper was preferred for its flavour, and is only really available at limited Indian merchants today. The pepper we use in recipes is almost unrecognizable to those from the dark and middle ages. This would have most likely been made with long pepper.

@京狐夢美 I installed induction in my kitchen renovation, but the cheaper units are still basically on/off cycles to regulate temperature. :( Great for speed of cooking and to do a good stir fry though. Boils water in half the time a gas system would without the in house pollution issues. Just not great for fine control. Guess I'll buy a good outdoor kitchen/fancy barbecue with wok burner and smoker and get the best of both worlds. I have a portable induction single burner that runs on a 240v socket that is much better than my actual cooktop in many ways. The cooking modes allow better fine control of timing. If you aren't at the kitchen renovation stage but want to see what the hype about induction is all about I can highly recommend.

@kellywalker7127 Deviled ham is a delicious toast topper. Lobster is also a common breakfast spread for those who enjoy it.

Aachen Christmas market for sure. Aachen, being the center of Charlemagne's empire, and thus being the places of crowning of both Louis I (the Pious) of the Franks and Otto I of the Germans. Very historic city and a great market too.

We have a massive feral horse problem and lets be honest it's a really healthy and tasty meat, having eaten it in Europe. We need to allow limited processing of it for human consumption here in Australia, rather than just grinding it up for pet food or exporting it to Europe.

The real reason why coffee gets banned is that it encourages sobriety, which makes people see how bad things really are, which leads to revolts and downfalls of leaders. I'm amazed coffee bans haven't taken on in modern times.

Once you have a crack in the egg shell, sliding a teaspoon between the egg and the shell is of great use in shelling the egg.

Roast Beef and Chutney, as at least it's a derivative of the first official "sandwich", created by John Montagu, 4th Earl of Sandwich. A Reuben is pretty good, as is any Yiros. We can get into the "what is a sandwich" debate about now. Is a hotdog a sandwich? What about a calzone?

@MossyMozart you can use it all of the above ways, and grind it in a mortar and pestle too. Depending on if it's dried or fresh, obviously, just like how black, red and green peppercorns are handled differently due to storage and moisture content. Or even put them in whole into curries the same way people use smaller chillies such as birds eye chillies, or fresh green peppers are used in Asia. Grains of Paradise and Long Pepper are perfectly good substitutes for Black Pepper, although both will alter the flavour profile a bit, usually adding a more complex flavour rather than just the normal black peppery spiciness. Occasionally they might make a discordant note to the rest of your curry or soup, but that's part of the adventure of cooking.

Congratulations. And there are few better recipes to start with. Onion soup is simple ingredients that create incredibly complex flavours. If you've ever had tinned French onion soup and written it off because of that, and never tried it in a proper French restaurant or made it yourself to a proper French recipe you really have never tried this.
