Black pepper was chosen, much like the supermarket stock of today, for its storage capability for the benefit of merchants and not the consumer. Long Pepper was preferred for its flavour, and is only really available at limited Indian merchants today. The pepper we use in recipes is almost unrecognizable to those from the dark and middle ages. This would have most likely been made with long pepper.

@MossyMozart you can use it all of the above ways, and grind it in a mortar and pestle too. Depending on if it's dried or fresh, obviously, just like how black, red and green peppercorns are handled differently due to storage and moisture content. Or even put them in whole into curries the same way people use smaller chillies such as birds eye chillies, or fresh green peppers are used in Asia. Grains of Paradise and Long Pepper are perfectly good substitutes for Black Pepper, although both will alter the flavour profile a bit, usually adding a more complex flavour rather than just the normal black peppery spiciness. Occasionally they might make a discordant note to the rest of your curry or soup, but that's part of the adventure of cooking.
