  1. A bigger serve of a dessert type meal is a cheap way to feed farmhands. Sugar was relatively stable to transport and thus cheap. And lets be honest, who hates the idea of dessert instead of a meal with vegetables? Of course, hard physical labor, 18th century diets, sugar was hardly the problem that it is today in the obese and calorie overloaded western world.
