Cafestol and kahweol, two diterpene oils in unfiltered coffee, lead to raised cholesterol levels by suppressing the body's production of substances involved in cholesterol breakdown. As soon as I started filtering coffee, or using organic instant coffee, my "sky high" cholesterol levels ( I'm virtually a vegan) dropped down to low very quickly. This is well known in Europe. I don't know why American medical experts haven't caught on to this important point. It could save a lot of people from the side effects of statins.
