What we’re seeing in the video has nothing to do with “hardness” which is simply a measurement of the surface resistance of a metal. The older hammerhead is displaying greater strength and ductility than the Chinese one which has deformed due to lower strength resulting in obvious plasticity. Simplified..it has irrevocably deformed beyond its ductile and yield strength. This could be a result of either different (cheaper) alloying additions to the steel or a different (cheaper) forging process, but probably both.
