  1. Inter-ester-if-ication is the correct pronunciation... and as a chemist I'd be a bit more leery about the tert-Butylhydroquinone (TBHQ) added at the end there. See that at 8:03? We add TBHQ to diesel fuel as a stabilizer, this is part of the reason the shortening lasts so long. Chemically speaking shortening isn't terribly different from diesel however that doesn't mean I'm inclined to eat diesel stabilizer.
