  1. I love carbon steel cookware. Performs like cast iron, but is a fraction of the weight. I actually never understood what the big deal was about the seasoning method! Since the seasoning improves every time you use carbon steel (and pretty much no matter what you cook in it), why should the seasoning method matter much? Just need to make sure to clean and season the pan before initial use. I like the French brand Matfer Bourgeat because of the handle angle. Is perfect if you're a petite 5'2" like me:). Pretty inexpensive, too. Thanks for the review. I look forward to seeing you use the pan over time!

  2. I finally pulled the trigger on the Matfer 24cm carbon steel fry pan and after much research, I'm going to try your seasoning method. Seems just as effective as the zillion other methods, but very simple and the least wasteful. Will keep my seasoning cloth in a ziplock bag in the fridge in case I need to do touchup re-seasoning too. Thanks for sharing:)
