Lack of stable docs is what's been keeping me from switching to NixOS. I love the idea of Nix—it's like conda on psychotropics—but if all I'm after is reproducibility and rollbacks, pacman + timeshift is enough for me.

Nix isn't containers, just overlays. No sandboxing, individual components are reused as possible.

It's not fully containerized, just overlayed up the wazoo (like conda if you've done any scientific Python). Means reuse of common dependencies, faster startups and no annoying sandboxing.

Yeah, if you know what you want, pacstrap -K plus a simple script to deploy your configs is gonna be fine. Where Nix shines, IMO, is as a replacement for virtual environments, especially since you can run everything in userspace. I have Hyprland running on SteamOS—no need to touch the read-only file system—through Nix, and it's easier to manage (IMO) than a dedicated container system like distrobox.
