One thing to keep in mind about selective breeding of crops, for the most part crops have been selectively bred to increase yield. Either by growing larger fruits and vegetables or by cultivating specimens that have their edible parts increased. Like with watermelons. A watermelon from 300 years ago, did not contain as much palatable red flesh inside as a modern, ripe watermelon does. As we can see from paintings of cut watermelons from that time period.

Well, I did hear of a medieval dish called "stuffed cow udder"... Which doesn't sound very appealing at all. And I've also never been a big fan of food made from offal. I like meat (as in muscle tissue) from animals, but i'm not too keen on eating liver, kidneys or stomach. But aside from that, most medieval food seem rather wholesome and appealing to me.
