The peasants were free. But they had to pay tithes. Which is taxation. So Americans would argue that's not freedom. Also peasants weren't free to move around as they wished, because they were tied to the household of the farm they were tasked with farming. They can't just choose to leave without the permission of their lord.

The church also pretty much was the only scientific institution at the time. Despite it's spiritual focus, monks and clergymen were about the only people conducting scientific research at the time. The caveat being that they had to avoid doing findings that contradicted scripture.

The church in 12th century england would also have been the go to scribes and book keepers of the realm since they had the most literate people within their insitution. Not every nobleman was competently literate. And it wasn't too common to have anything like a professional secretary who wasn't a man of the church.
